ITALIAN RICE DISH 
1/4 c. butter
1/2 c. mushrooms
1/2 lb. sausage
1/4 c. tomato juice (or 1/4 tsp. tomato paste without seeds)
1/4 c. white wine
1 c. long grain rice
10 c. chicken broth
Grated cheese

Fry in butter, mushrooms and sausage. Then add tomato juice or tomato paste. Cook until practically dry. Add wine and rice. Stir continually after wine is absorbed. Start adding chicken broth in small amounts until rice is cooked (you may not need to use all chicken broth). Stir in cheese to taste before serving.
