ZUCCHINI QUICHE 
1 c. Bisquick
1/2 c. chopped onion
1/2 c. ground Parmesan cheese
2 tsp. dried parsley
1/2 tsp. salt
1/2 tsp. seasoning salt
1/4 tsp. oregano
1 clove garlic, crushed, or 1 tsp. powder
4 eggs, beaten
1/2 c. oil
3 c. zucchini, grated or sliced 1/4 inch (may use frozen)

Mix the first (8) ingredients. In a separate bowl, beat the 4 eggs and beat in the oil. Then with a tablespoon, mix in the zucchini. Add the last mixture to the first. A small can of mushroom pieces adds goodness but is optional. Bake in a greased pan (8x8, 9x9 or 8x12-inch) for 50 minutes at 350°F.
