ZUCCHINI QUICHE 
3 zucchini, small
1/2 cup Parmesan cheese
9 eggs
1/2 tsp. oregano
5 tbsp. butter
1/4 cup onion, chopped
1/4 tsp. salt
1 1/2 cups milk
1/2 cup Bisquick

Cook zucchini and onions in half the butter with oregano and salt till tender (about 5 minutes). In blender, mix eggs, milk, cheese, Bisquick, salt and remaining melted butter. Mix well, about two minutes. Pour into 13-inch dish or pie plate. Spread zucchini all over top. Bake 30 to 40 minutes at 375°F.
