ZUCCHINI QUICHE 
2 c. zucchini, sliced thin
1 c. onion, sliced
3 tbsp. vegetable oil
1 clove garlic, minced
1 1/2 tsp. salt
4 eggs, beaten
1 c. milk
1 c. heavy cream
1/2 Mozzarella cheese, grated
10 inch pie crust

Saute zucchini, onion, and garlic in oil. Season with salt. Cover pie crust with this mixture. Combine remaining ingredients and pour into pie shell. Bake in preheated 375 degree oven 30-35 minutes until custard is set.
