ST. PATRICK DAY CUPCAKES | |
2 c. sifted cake flour 1 (4 serving) size instant pistachio pudding mix 3/4 c. miniature chocolate chips 2 1/2 tsp. baking powder 1/2 tsp. salt 2 beaten eggs 1 1/4 c. milk 1/2 c. cooking oil 1 tsp. vanilla Topping: 1/2 of can cream cheese frosting green M&M'S® 2/3 c. sugar green colored sugar Line muffin cups with paper cups. In large mixing bowl stir together flour, pudding mix, chocolate pieces, sugar, baking powder, and salt. In small bowl combine beaten eggs, milk, oil and vanilla. Stir into flour mixture just until combined. Fill muffin cups 2/3 full. Bake in a preheated 375°F oven for 18 to 20 minutes or until golden brown. Cool on wire rack. Frost, sprinkle with green sugar and then add M&M'S® on top. |
