ST. PATRICKS DAY CUPCAKES 
1 3/4 c. flour
1 (4 serving size) instant pistachio pudding
3/4 c. mini chocolate chips
2/3 c. white sugar
2 1/2 tsp. baking powder
1/2 tsp. salt

Sift all together and set aside.

2 beaten eggs
1 1/4 c. milk
1/2 c. cooking oil
1 tsp. vanilla

Mix all together. In small bowl combine beaten eggs and liquids. Stir into flour mixture just until combined. Fill muffin tins 2/3 full. Bake at 350 degrees for 18 to 20 minutes. Makes 18 cupcakes.

Use white frosting. Sprinkle tinted green sugar on top and green M & M's. Please note: These stir and bake cupcakes need no mixer.

I made these cupcakes 2 years back. I didn't add the M&M's. I colored the white frosting with green food coloring. I didn't use the colored sugar on top. They were delicious cupcakes. Thank you for sharing this recipe!
