ST. PATRICK'S DAY CUPCAKES 
1 3/4 c. flour
4 serving size pkg. instant pistachio pudding
2 beaten eggs
3/4 c. mini chocolate chips
1/2 c. oil
1 tsp. vanilla
1/2 can cream frosting
1/2 c. green M & M's
1/2 tsp. salt
1 1/4 c. milk
2/3 c. sugar
2 1/2 tsp. baking powder

Grease muffin tins or line with papers. In a large mixing bowl, stir together flour, pudding, chocolate pieces, sugar, baking powder and salt. In a small bowl combine beaten eggs, milk, oil, and vanilla. Stir into flour mixture, just until combined. Fill muffin cups 2/3 full. Bake at 375 degrees for 18-20 minutes or until golden brown. Cool on a wire rack. Frost with cream cheese frosting; sprinkle with green sugar and green M & M's.
