2 c. cooked mashed sweet potatoes
1 1/2 c. milk
3 eggs
1/2 tsp. salt
1/8 tsp. ginger
1/8 tsp. nutmeg
1 unbaked deep dish pie shell

In large bowl, mash potatoes, beat in sugar, milk, eggs, salt, and spices. Pour into unbaked pastry shell. Bake 350 degree oven 1 hour or until tip of knife inserted in center comes out clean.

Cool and slice.
