SWEET POTATO CUSTARD PIES 
Pastry for two (8 inch) pies
2 1/2 c. mashed sweet potatoes
1/2 tsp. salt
2 c. milk
4 tbsp. butter
3 tbsp. flour
2 c. sugar
4 eggs
2 tsp. vanilla

Cook sweet potatoes in jackets until tender. Skin and put through colander while hot. Add salt and mix. Simmer milk with butter; mix flour and sugar and add to hot milk. Beat eggs until frothy and add to milk. Add mashed sweet potatoes and stir until mixture begins to bubble. Add vanilla. Pour into pastry shells. Sprinkle top with nutmeg and brown sugar (optional). Bake in 400 degree oven 10 minutes, reduce to 350 degrees and bake until custard is firm and lightly browned, usually 30 to 40 minutes.
