SWEET POTATO CUSTARD PIE 
1 (10 inch) unbaked pie shell
1 sm. sweet potato
1/2 c. butter
1 1/2 c. sugar
1 tbsp. flour
1 tsp. vanilla
3 eggs
1 (5.33 oz.) can evaporated milk

Peel and boil potato. Drain and mash with butter. Beat in sugar, flour, and vanilla. Add eggs one at a time, beating well after each. Add milk; beat well. Pour into pie shell and bake at 350 degrees for 45 minutes or until done.
