2 c. cooked mashed sweet potatoes
1 c. milk
2 eggs
1/2 c. sugar
1/2 tsp. salt
1 tsp. grated lemon rind or 1 tsp. lemon flavoring
1 tbsp. butter

Combine all ingredients. Pour into unbaked pie shell. Bake at 350 degrees until custard is done.
