SWEET & SPICY CARROT SALAD 
1/3 c. water
1 lb. carrots, thinly sliced or diced
1 tbsp. honey

DRESSING:

2 tbsp. lemon juice
1/4 tsp. cinnamon
1/8 - 1/4 tsp. cumin
1/4 c. chopped fresh parsley leaves
2 tbsp. honey
1/4 tsp. paprika
1 sm. clove garlic, peeled & finely minced

Put water and honey in a medium sized saucepan. Bring to a boil, add the carrots and stir. Lower the heat and simmer, covered until the carrots are just tender, about 10 minutes. (DO NOT OVER COOK.)

Meanwhile, combine the dressing ingredients in a medium sized bowl. Drain the carrots well and add them to dressing mixture. Mix well, cover and chill at least 1 to 2 hours to mingle flavors. Stir occasionally to coat carrots. Serve chilled or at room temperature.
