BRAN MUFFINS 
1 c. bread flour

Sift once, then measure. 3 1/2 tsp. baking powder 3 tbsp. sugar 1 egg 3/4 c. milk 3 tbsp. melted shortening 1 c. whole bran

Sift together flour, salt, baking powder and sugar. Beat egg 1 minute at No. 8 speed then add milk and shortening to egg. Add bran to egg mixture. Add flour mixture to the entire egg mixture and beat at No. 2 speed just long enough to dampen, less than 1 minute. Bake in greased muffin tins at 425 degrees for about 20 minutes. Makes 8 large muffins.
