SQUASH "THINGY" 
1 tbsp. vegetable oil
4-6 med. zucchini squash, thinly sliced
1 med. onion, thinly sliced
1 med. green pepper, chopped
1 can tomatoes or 4-6 fresh tomatoes
3/4 c. mild to moderate salsa
1/4 lb. any kind, fully cooked sausage (smoked is good)
1 tbsp. parsley flakes or fresh parsley
1 tsp. sage or poultry seasoning
1 tbsp. (or more to taste) chicken or beef bouillon
1/4 tsp. pepper

Saute onions and squash about 5 minutes. Add remaining ingredients. Cover and simmer until squash is medium soft, approximately 30 minutes. Serve with Parmesan cheese and French or Italian bread.
