BERRY FRITTERS 
2 eggs, beaten
2 tbsp. oil
1/2 c. sugar
1/2 tsp. salt
3 tsp. baking powder
1 tbsp. vanilla
3/4 c. milk
3 c. flour
blueberries, blackberries, peaches, other fruit or cottage cheese may be used

Wash and clean 2 pints of berries. Sprinkle with sugar and flour. Divide into six portions. Set aside.

Knead dough with flour until it can be rolled out without sticking to rolling pin. Divide dough into 6 portions. Roll each dough portion into an oblong shape. Place one portion of berries onto half of the rolled out dough. Fold dough over and seal edges with a fork. Fry in oil in an electric frying pan at medium heat until brown.
