SUMMER SAUSAGE 
6 lb. hamburger
5 tbsp. Norton tender quick salt
3 1/2 tsp. mustard seed
3 tsp. course ground black pepper
2 1/2 tsp. garlic salt
1 tsp. onion salt
1 tsp. Hickory salt or 5 tsp. liquid Hickory smoke

Mix well. Place in refrigerator for 24 hours. Divide into 6 parts. Form loaves. Wrap in cheesecloth or net and bake at 225 degrees for 3 hours. Cool. Remove net.
