COTTAGE CHEESE POTATO PUDDING 
1 lb. cottage cheese
2 lbs. potatoes
3 eggs, beaten
3 tbsp. flour
1/2 c. milk or sweet cream
4 tbsp. butter
1 med. onion (optional)
Salt and pepper to taste

Heat milk or cream. Peel and finely grate potatoes into milk - add cottage cheese, eggs, flour, salt and pepper. Fry chopped onion in butter and add to mixture.

Mix well - pour into buttered casserole. Bake at 400 degrees for 15 minutes. Reduce heat to 375 degrees and bake 30 minutes or more until golden brown. Serve with sour cream. Serves 6 to 8.
