CHICKEN SCAMPI | |
1 lb. boneless chicken 1 c. bread crumbs 1/2 c. vegetable oil 1 lb. linguini 1 stick butter 3 cloves garlic, minced 1 tbsp. lemon juice 1 egg, beaten Salt & pepper Cut chicken into bite-sized pieces. Dip in eggs and bread crumbs which have been mixed in salt and pepper. Heat oil in large skillet. Add chicken. Saute 30 seconds until brown on both sides. Remove. Drain on paper towel. Wipe out oil from pan. Cook linguini. While linguini cooks, melt butter in skillet and add garlic. Cook 1 minute. Add chicken and lemon juice. Toss to coat chicken. Don't over cook. Drain linguini. Toss with butter. |
