MERLE'S COLESLAW 
Mix and set aside:

1 lg. carrot, grated
1 med. onion, chopped
1/4 sm. head red cabbage, grated
1/2 sm. head green cabbage, grated
1 tsp. celery seed (optional)

VINEGAR DRESSING:

1/2 c. mayonnaise (I use cholesterol-free)
1/4 c. wine vinegar
2 tsp. sugar (I use 2 packets of Sweet and Low)

Mix dressing and pour over the cabbage mixture. These are approximate measures so if the slaw does not have enough moisture, add more vinegar and mayonnaise until it is moist enough to suit you. (Add a little at a time).
