FILLED STRAWBERRY CREPES | |
1 c. all purpose flour 1/4 tsp. salt 1 tbsp. honey 3 eggs 1 (12 oz.) can evaporated skim milk FILLING: 1 c. plain low fat yogurt 1/3 c. low sugar strawberry spread 2 pkts. Equal brand sweetener Combine flour and salt in mixing bowl. In separate bowl, mix honey, eggs, and milk. Beating with electric mixer on medium speed, gradually add milk mixture to flour mixture until well blended. Heat small (6 inch) non-stick skillet with several drops of vegetable oil. Makes crepes, one at a time, using about 3 tablespoons batter per crepe, cooking each side about 1 1/2 minutes. Cool slightly. For filling, thoroughly combine yogurt, strawberry spread, and sweetener. Fill each crepe with 1 1/2 tablespoons of strawberry crepe filling. Roll up jelly roll style. Serve warm. Yield: 14. Per serving: calories 93. |
