SOUTHERN PECAN BREAD 
2 1/2 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
1 1/2 tsp. vinegar or lemon juice
3/4 c. milk
1 c. light brown sugar
1 egg
1/4 c. melted butter
1 c. coarsely chopped pecans

Preheat oven to 350 degrees. In large bowl mix flour, baking powder, baking soda and salt. In small bowl, combine vinegar or lemon juice and milk. Let stand a few minutes. Add brown sugar, egg, butter and vanilla. Beat until combined.

Add liquid ingredients to dry ingredients. Stir until thoroughly mixed. Stir in pecans. Pour into lightly greased 9 x 5 inch loaf pan. Bake 50 minutes or until cake tester in center comes out clean. Cool in pan for 10 minutes. Remove bread from pan and cool on wire rack. Makes 1 loaf.
