GREEN BEANS WITH GARLIC OIL | |
2 lbs. fresh or frozen green beans 1 sm. onion, thinly sliced and separated into rings 2 cloves garlic, minced 2 tbsp. olive oil 1/2 tsp. ground cumin 1/4 tsp. ground coriander 1/4 c. toasted slivered almonds Trim fresh beans. In a large saucepan cook fresh beans, covered in a small amount of boiling water for 10-12 minutes or until crisp-tender. (For frozen beans, cook covered, in 1 cup boiling water for 7 minutes.) Meanwhile, in a small saucepan cook onion and garlic in oil until tender. Stir in the cumin, coriander, and 1/8 teaspoon salt. Cook one minute more. Toss onion mixture with beans. Makes 12 servings. |
