ESTHER'S RICE PUDDING 
1 c. rice
4 c. whole milk
2 c. half and half cream
1/2 tsp. salt
1 tsp. vanilla
1 scant c. granulated sugar

Combine rice, milk and half and half in top of double boiler. Cook over boiling water, stirring frequently, until rice is soft and mixture is thickened - takes about 1 1/2 hours. Remove from heat. Blend in sugar, salt and vanilla carefully, until sugar is well blended. Pour in a serving bowl. Sprinkle with cinnamon and sugar if you so desire. Serves 10-15.
