HASH BROWN CASSEROLE 
2 lg. frozen hash brown potatoes
1 lg. onion, diced
1/2 c. (1 stick) butter
16 oz. sour cream
1 can cream of chicken soup
1 c. shredded Cheddar cheese
Salt and pepper to taste
1 can French fried onions, crumbled

Preheat oven to 350 degrees. Place frozen hash brown potatoes in a layer in a 9x13 inch baking dish. Saute onion in butter. Sprinkle onion over hash browns.

Mix sour cream, chicken soup, cheese, salt and pepper. Pour mixture over potatoes and onion. Bake for 35 minutes at 350 degrees. Sprinkle French fried onions over top of casserole and bake 5 minutes more.
