DO AHEAD PARTY POTATOES 
10 med. or 8-9 lg. potatoes
2 (3 oz.) pkgs. cream cheese, room temp.
1 c. sour cream
1 tsp. onion salt
1 tsp. garlic salt
1/4 tsp. ground pepper
2-3 tbsp. butter
3/4 c. grated Cheddar cheese
Paprika

Peel and quarter potatoes. Cook 20-25 minutes until tender. Drain well. Mash until smooth. Add a little milk if necessary.

Mix cream cheese, sour cream, salts and pepper together. Beat into potatoes with wire whisk until fluffy. Taste for seasonings. Add salt, if necessary.

Place in buttered 13x9x2 inch pyrex pan. Cool. Cover and refrigerate. Flavor is better if refrigerated a day or two.

To serve: Sprinkle with grated cheese, paprika and dot with butter. Bake at 350 degrees for 30-45 minutes uncovered until heated through. Serves 8-10.
