ENCHILADA 
1 lb. hamburger
1 lb. cheddar cheese
10 to 12 corn tortillas
15 oz. can of refried beans
1 onion
1 pkg. of enchilada mix
16 oz. can of tomato sauce

Brown hamburger, drain the hamburger. Quick fry the tortillas so they remain soft. Mix the enchilada mix and tomato sauce simmer 20 to 30 minutes. Mix the hamburger and refried beans. Spread the hamburger and refried bean mix on each tortilla shell. Add a tablespoon or 2 of onion, and cheese over the hamburger mix. Roll the tortilla and place in a baking pan. Pour the enchilada and tomato mix over the enchilada. Sprinkle any remaining onion and cheese mix on the top of the sauce either before or after baking. Microwave covered with wax paper for 5 to 10 minutes or bake covered for 20 or 30 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
