PUFFIN CRAB 
2 tbsp. butter
2 tbsp. flour
1 c. hot milk
3 egg yolks
1 (6 oz.) can crabmeat
1/2 c. mayonnaise
1 tsp. Durkee's dressing
Dash of salt
Dash of pepper
Dash of cayenne pepper
3 egg whites
1 tsp. paprika

STEP 1: Make a thick cream sauce by melting butter and flour together. Gradually add egg yolks, then stir in hot milk. Cook 5 minutes. Remove from heat.

STEP 2: Fold into above mixture, mayonnaise with Durkee's; add the flakes of drained crabmeat. Season to taste; add cayenne.

STEP 3: Beat egg whites stiff. Fold egg whites into crabmeat mixture. Place in greased 1-quart casserole dish. Dust with paprika. Bake at 400 degrees until brown and puffed, about 25 minutes. 4-6 servings.
