GAZPACHO 
1 c. tomato juice
3/4 c. vegetable broth
1 tsp. vegetable seasoning
2 tbsp. lemon juice
1 tbsp. cider vinegar
4 tsp. olive oil
4 lg. tomatoes, peeled and chopped
1 med. chopped cucumber, peeled
1/2 chopped green pepper
2 sm. green onions, chopped
1 sprig parsley, chopped
1 clove garlic, minced
Bread crumbs and chopped fresh parsley

Place the first 7 ingredients in a blender and blend briefly. Add remaining ingredients; blend with on-and-off motion until vegetables are just chopped. chill for at least 3 hours. Garnish with the bread crumbs and parsley. This liquid cold soup comes from the country of Spain. Yield: 6 servings.
