RIGATONI WITH SAUSAGE 
1/4 c. cooking oil
1 lb. sweet Italian sausage
1 lg. onion, sliced
1 clove garlic, crushed
1 lb. fresh mushrooms, sliced
1 bay leaf
1 1/2 tsp. salt
1/4 tsp. pepper
6 oz. can tomato paste
3 c. water
1 tsp. oregano
1 tsp. sugar
1 lb. pkg. rigatoni
1/2 c. Parmesan, grated
1/4 lb. Muenster cheese, sliced or use Cheddar

Heat oil in large skillet. Saute sausage (sliced), onion, and garlic until meat is browned. Add mushrooms, bay leaf, salt, pepper, tomato paste, water, oregano, and sugar. Bring to boil. Cover; simmer for 1 hour, stirring occasionally. Meanwhile, cook rigatoni. Drain; rinse. Preheat oven to 400 degrees. Grease 3 quart casserole. Arrange rigatoni in casserole. Top with sauce. Sprinkle with Parmesan. Top with Muenster. Bake 20 minutes.
