TOMATO SAUCE, SAUSAGE AND
RIGATONI
 
1/4 c. olive oil
5 cloves of garlic, chopped
1 sm.-med. onion, diced
6 leaves basil or 2 tbsp. of dried basil
8-10 sweet sausage
2 cans crushed plum tomatoes
1 1/2 lbs. Rigatoni or other macaroni
Salt (to taste)
Grated cheese (to taste)

In pot (4-6 quart) add oil, garlic, onions, basil and sausage. Saute until onions are soft and sausage are browned on medium heat. Add plum tomatoes and let come to a boil. Lower when it comes to a boil and simmer for 2 hours (covered), add salt to sauce.

In other pot boil water and salt. Add macaroni. Drain pasta, put in serving bowl and add tomato sauce. Sprinkle with cheese and serve with sausage on the side. Makes 6-8 servings.

(If oil comes to top of sauce while cooking, skim with a spoon until you removed as much as you could.)
