FRESH FRUIT AMBROSIA | |
1/4 c. orange juice 1/2 c. club soda 1 med. banana 3 c. fresh fruit pieces (i.e. cantaloupe, grapes, pineapple, apple, pear, melon, strawberries, etc.) 1/2 tsp. nutmeg 1/4 tsp. cardamom 1 tbsp. sweetened coconut, toasted Combine orange juice, club soda and banana in blender and puree until smooth. Pour over fresh fruit. Sprinkle with spices. Cover and refrigerate until ready to serve. Sprinkle on coconut and serve immediately. Makes 6 (1/2 cup) servings. 1 serving = 1 1/2 fruit exchanges. |
