CITRUS SALAD 
2 c. spinach leaves
1 sm. orange
2 tbsp. red onion
3 walnut halves

DRESSING:

1 tbsp. rice vinegar
1/4 tsp. Dijon mustard
1/4 tsp. sugar (or Equal)
Dash salt
Dash pepper
1/2 tsp. olive oil

Wash, dry and chill spinach leaves. Peel and segment orange.

Whisk dressing ingredients together in bowl.

Finely slice red onion. Coarsely chop walnuts.

Pour dressing over salad and toss.
