QUICHE LORRAINE | |
1/2 lb. bacon (or can use 1/4 lb. diced ham if desired) 1 tbsp. butter 1/2 c. finely chopped onion 4 eggs, slightly beaten 1 tsp. salt 2 c. cream or top milk 1/2 lb. Swiss cheese, cut sm. Cook bacon until crisp. Crumble it and put aside. Cook butter and onion 5 minutes. Mix remaining ingredients. Add bacon and onion. Season with cayenne and nutmeg. Pour into unbaked 9-inch pie crust. Bake at 450 degrees for 10 minutes, then at 325 degrees until firm (20-25 minutes). |
