SWEET POTATO CASSEROLE | |
3 c. cooked, mashed sweet potatoes 1 c. sugar (or a little less) 2 eggs 1 tsp. vanilla 1/2 c. milk 1/2 c. butter TOPPING: 1 c. firmly packed brown sugar 1/3 c. all-purpose flour 1/3 c. butter 1 c. chopped nuts Combine sweet potatoes, sugar, eggs, vanilla, milk and 1/2 cup butter; beat with electric mixer until smooth. Spoon into a greased 2 quart shallow casserole. Combine brown sugar, flour, 1/3 cup butter and pecans. Sprinkle over top of casserole. Bake at 350 degrees for 30 minutes. Yield 8-10 servings. |
