GROUND BEEF SOUP 
1 lb. ground beef
1 c. chopped onion
1 c. cubed potatoes
1 c. sliced carrots
1/2 c. chopped celery
1 c. chopped cabbage
16 oz. can tomatoes
1/4 c. uncooked white rice
1/4 c. barley
1 bay leaf, crushed
1/2 tsp. thyme
1/4 tsp. basil
4 tsp. salt
1/2 tsp. pepper
2 qts. water
4 beef bouillon cubes

Brown meat and onion. Add remaining ingredients. Simmer just until potatoes and carrots are tender, about one hour. Yields 8 to 10 servings.

A yummy vegetable soup that doesn't have to be cooked for hours!
