SMOTHERED CHICKEN 
6 lbs. chicken (any combination, breasts are very good)
2/3 c. flour
2 tsp. salt
1/4 tsp. pepper
2 sticks butter
1 lg. onion, chopped
3 c. water

Place flour and salt in plastic bag. Shake chicken in flour mixture. In large skillet brown the chicken on both sides in butter. Place chicken in large roasting pan. In same skillet, saute onion. Add 3 cups water to onions and bring to boil. Pour over chicken. Bake, covered at 350 degrees for 1 hour. Remove chicken from pan. Blend together 1/2 cup flour with 1 cup water. Mix well. Bring liquid in roasting pan to boil over medium heat. Add flour mixture and cook until thickened. Pour gravy over chicken or serve on the side. Great with rice or noodles. 8 to 10 servings.
