EASY BANANA BREAD | |
1 3/4 c. flour 2 tsp. baking powder 1/4 tsp. baking soda 1/2 tsp. salt 1/3 c. shortening (prefer butter) 2/3 c. sugar 2 eggs, well beaten 1 c. mashed bananas (usually 2-3) Best if you use the bananas that you didn't eat - the ones that start turning black. (In fact, the older - the better, as long as it's not moldy.) Sift dry ingredients except sugar. Beat shortening until creamy. Add sugar while beating. Add eggs and beat. Add flour mixture and bananas alternately; beat well. Turn into well-greased pan. Bake at 350 degrees (bread pan 1 hour, Bundt pan check after 25 minutes). Eat plain or with butter. |
