QUICK CHUTNEY 
12 green tomatoes, peeled
6 sweet red peppers, chopped
1 hot red pepper, chopped
1 c. onion, chopped
1/2 c. celery, chopped
1 pint vinegar
2 c. white or brown sugar
3 tbsp. pickling spice
1 tbsp. ginger root
6 sour apples, peeled and chopped
1/2 lb. raisins

Mix veggies with salt and let stand overnight. Add remaining ingredients. Cook, stirring until thick and clear.

Makes 3 pints.
