THUMB COOKIES 
1/4 lb. butter
1 egg yolk
1 c. flour
1 egg white
1/4 c. sugar
1/2 c. nuts, chopped fine
Preserves, such as apricot, strawberry or peach

Mix butter, sugar, flour and egg yolk thoroughly. Roll dough into balls the size of a walnut. Dip into egg white and then into chopped nuts. Place on cookie sheet and punch a hole in middle with thumb. Bake 5 minutes at 350 degrees. Re-punch any holes that have filled in and bake again for 12 minutes. Remove and fill holes with preserves immediately. Makes about 2 dozen.
