CHEESECAKE CUPCAKES 
1 tsp. vanilla
1 tbsp. lemon juice
3/4 c. sugar
2 eggs
2 pkg. cream cheese

Blend the ingredients until light and fluffy. Put vanilla wafers in the bottom of cupcake liners and a tablespoonful of batter on top. Cook for 20 minutes in preheated 375°F oven. After they are thoroughly cooled, put Cool Whip on top and a cherry.

You may also use cherry pie filling, blueberries or strawberries as a topping.

Note: Slowly take liners off cupcakes when still warm. Use regular-size cupcakes.
