DATE ROLL UP COOKIES 
DATE FILLING:

1/2 lb. dates
1/2 c. water
1/4 c. sugar
3/4 c. pecans

COOKIE DOUGH:

1 c. shortening
1 c. brown sugar
1 c. white sugar
2 eggs, beaten
3 c. flour (scant not heaping)
1 tsp. baking soda
1 tsp. vanilla

Combine all but nuts in pan. Bring to a boil. Heat until thickened. Remove from stove and stir well. Add pecans and mix well. Cool. In preparing the dough, mix the ingredients. Place on floured wax paper. Roll out 3/8 inch thick, spread date filling on top and roll up. Wrap with wax paper and store in refrigerator for 2 hours or longer. When ready to bake, cut with a sharp knife into 1/4 to 1/2 inch slices. Bake in 375 degree oven until golden brown.
