VERMONT JOHNNY CAKE 
1 3/4 c. flour
1 c. cornmeal
4 tsp. baking powder
1 tsp. salt
3 eggs
1 1/4 c. milk
1/2 c. maple syrup
1/2 c. cooking oil

(I use 1 1/2 cups flour - unbleached and 1 1/2 cups cornmeal).

In large bowl, stir together flour, meal, baking powder and salt; set aside. Slightly beat eggs and add milk, syrup, and oil until blended. Add to flour mixture and stir to moisten. Turn into greased 9 x 9 inch square pan. Bake at 350 degrees for 35 minutes, or until cake pulls away from the sides of the pan. Cool slightly and cut into bars. Serve warm with or without jam. (Very New England!)
