CHICKEN CASSEROLE 
2 to 3 chicken breasts
16 oz. Velveeta cheese
1 c. chopped celery
1 c. chopped bell pepper
2 cans cream of chicken soup
1 can Ro-Tel
1 bag Doritos

Boil chicken breasts until done. Take breasts out to cool. Put Doritos in chicken broth. Layer Doritos in bottom of 13 x 9-inch pan. Cut chicken into small amounts and layer on top of Doritos, then add bell pepper and celery, then add cream of chicken soup. Add Ro-Tel. Grate Velveeta cheese, then add to top. Take 2 handfuls of Doritos and crumble on top.

Heat oven to 375°F. Cover pan with foil. Cook, covered, for 1 hour. Take cover off. Cook extra 10 minutes.
