ZUCCHINI BREAD 
3 lg. eggs
1 c. oil
2 c. grated zucchini, seeded and peeled
2 c. sugar
3 tsp. vanilla

3 c. flour, unsifted
1 tsp. salt
1 tsp. baking powder

1 tsp. baking soda
3 tsp. cinnamon
1 tsp. nutmeg
1 c. chopped nuts (optional)
1 c. raisins

Bake at 325 degrees in bread pans (greased and floured) for approximately 1 hour OR bake in 9 x 13 inch cake pan at 350 degrees for 50-55 minutes.
