ICE BOX COOKIES 
1 c. shortening
1 c. brown sugar
1 c. granulated sugar
2 eggs, beaten
1 tsp. vanilla
1 1/2 c. flour
1 tsp. salt
1 tsp. baking soda
3 c. oatmeal
1/2 c. coconut or nut meats

Cream shortening and sugar. Add eggs and vanilla. Beat well. Sift together flour, salt and soda. Mix with oatmeal and nut meats; add to beaten mixture. Mix thoroughly with hands. Press and mold into long smooth rolls, about 2 1/2 inches in diameter. Wrap in waxed paper and chill until stiff (several hours). I like to freeze them. With a thin sharp knife, cut in 1/4 inch slices. Bake on ungreased cookie sheet at 350 degrees until browned, approximately 10 minutes.
