SALAD IN A SANDWICH 
4 sm. pita breads
1 c. shredded lettuce
1/2 c. chopped tomatoes
1/2 c. scallions, chopped
1 c. shredded cheese
1/2 c. bacon bits
1/2 c. diced carrots
1/2 c. low cal salad dressing

Combine all ingredients except bread in bowl. Slice pita bread 1/2 way. Fill with salad. Great on hot day. Light lunch.
