TOFU SALAD SANDWICH FILLING 
Mash one block of tofu (approximately 1 1/2 cups).

Then add: 1/4 c. celery, diced 2 tbsp. green pepper, diced 2 green onions with tops, finely sliced

Add only enough lemonnaise for desired consistency. Serve on whole wheat toast, crackers, or as a summer salad.
