CRANBERRY CRUNCH 
1 (12 to 16 oz.) bag fresh cranberries
1 (12 oz.) jar orange marmalade
grated rind or 1 orange (optional)
4 oz. crystallized ginger, cut into long slivers
1 c. sugar
1 c. coarsely chopped pecans

Place berries in long, flat Pyrex casserole dish and sprinkle the sugar on top. Seal with foil and cook in 350°F oven for approximately 25 minutes (berries should pop open when done). Stir to dissolve sugar. Stir in marmalade, ginger and nuts while berries are hot.

Makes approximately 1 quart. Great with turkey, pork and chicken!
