CREAMY RICE PUDDING (LO - CAL) 
1 1/2 c. cooked rice
2 c. skim milk, divided
2 tbsp. sugar
6 packets Equal or other sweetener
1 lg. egg
1/2 c. raisins
1 tbsp. reduced calorie butter
1/2 tsp. vanilla extract
Dash of ground cinnamon

In medium-size saucepan over medium heat combine rice, 1 1/2 cups milk, sugar, and Equal. Cook, stirring occasionally, 15-20 minutes or until thick and slightly creamy. Beat remaining 1/2 cup milk and egg; stir into rice mixture.

Stir in raisins. Without letting mixture boil, continue cooking 2 minutes. Stir in butter and vanilla. (Mixture will thicken on standing.) Transfer to serving bowl; sprinkle with cinnamon. Serve warm or cover and refrigerate.
