CREAMY RICE PUDDING | |
1/2 c. rice 4 c. milk 1/4 c. butter 3 eggs 3/4 c. sugar 1 tsp. vanilla 1/4 tsp. salt 1/2 tsp. nutmeg Combine rice and two cups of the milk in top of double boiler; cover and cook over hot water until rice is tender. Add butter. Beat eggs, mix in sugar, vanilla, salt and remaining milk. Add hot rice mixture, mixing well. Pour into buttered 2-quart baking dish. Sprinkle with nutmeg (nutmeg is essential to give this old-time favorite its special goodness). Bake in 350 degree oven about 50 minutes or until a silver knife comes out clean when inserted near center. |
